The structure of maize kernel-grain

The average corn grain is 8–17 mm long and 4–6 mm wide. On average, 1,000 grains weigh 250–400 g. (1)

The seed of the corn has three layers. The first layer starting from the outside is the pericarp. The pericarp is the part of the seed that is rich in fiber. The second layer is the endosperm which mainly contains carbs. The third is the embryo, where protein, vitamins, and minerals are present.

  • 70-87% (carbohydrates) starch (amylose and amylopectin), 
  • 6-13% protein. 
  • 4% fat,

  • 1-3% sugar
