About
Xinyu Zhang is a doctoral candidate at the School of Chemical Engineering, pursuing innovative research in sustainable food waste recycling. Under the guidance of Dr. Taghi Miri and Dr. Helen Onyeaka, she has been researching green extraction methods to extract nutrients from food waste and utilize them. Xinyu Zhang obtained the Master of Science degree from the University of Birmingham from 2021 to 2022, majoring in food safety, hygiene, and management. And started doctoral studies in February 2023. She has been working on how to integrate pectin, proteins and other bioactive compounds extracted from cocoa shells. The aim of Xinyu is to convert food waste into products such as degradable food packaging or nutritional supplements, thereby reducing the impact of food waste on the environment and further creating a green circular economy industry chain.
