About

AMBROSIA (Project 101181300) is a Horizon Europe Research and Innovation Action that aims to transform the European approach to food safety in the context of climate change. The project develops a holistic, system-wide risk assessment framework that integrates climate modelling, food safety data, and digital technologies, including artificial intelligence. By combining expertise in climatology, agrifood systems, predictive microbiology, and risk assessment, AMBROSIA will model and predict climate-driven food safety risks across the supply chain (“farm to fork”) in four major European biogeographical regions. The project focuses on key hazards such as Fusarium mycotoxins in cereals and enteric pathogens (Salmonella, E. coli) in fresh produce. It will deliver a digital platform for risk prediction, monitoring, and communication of mitigation and adaptation strategies, supporting more resilient and climate-adaptive food systems in Europe .
