A very interesting hard cow cheese from Andros. Made from the milk of local cows, it matures for forty days in a cool place, 15 days in oil and develops its spicy taste and special aroma. "Wrapped" then in herbs collected from the Andriot land, it enriches with their discreet aromas and causes you to eat it plain with fresh royal figs and later that will not exist with dried, but also grated or in pieces in a simple pasta.
