A traditional cheese from Andros and Tinos, volaki or kefalaki is a cheese with a long tradition. It takes its name from its shape: it is shaped in a round shape like a pear. It is made from cow's milk. When it is fresh, it is used like feta in the rest of Greece, while when it dries and matures it is melichloro, and its taste is reminiscent of spicy kefalotyri.
