Pine honey comes from the honey secretions of the insect Marchalina hellenica known as "cotton", "worker", "germ" or "parasite" of pine. Due to the low natural content of glucose in pine honey, its crystallization takes place at a fairly slow rate. Pure pine honeys remain liquid for more than a year and a half. The nutritional value of pine honey is based on the large number of different substances that coexist in its composition. A special place is occupied by nutrients which are found in large concentrations in Greek pine honey, thus characterizing it as honey with high nutritional value. It's not very sweet and it tastes really good. It is richer than flower honey in nutrients, proteins and amino acids. It has fewer calories.
