CULTIVAR: Roggianella .
PRODUCTION AREA: Spezzano Albanese
ALTITUDE: 450 metres above sea level.
TOTAL AREA: 13 hectares.
HARVEST TIME: October/November.
HARVESTING METHOD: manual and differentiated for each variety.

AVERAGE PRODUCTION: 4000 litres of Barbati Organic oil.
MILL: the olives are processed within 6 hours of harvesting in the company's continuous cycle mill (2 and a half phases), equipped with a hammer press and nitrogen systems to work in the absence of oxygen.
CERTIFICATIONS: all phases of organic production are controlled and certified in accordance with EC Reg. 834/2007 and EC Reg. 889/2008, verification body CCPB of Bologna.

I Secolari
This is an organic oil from an ancient variety of native olives: "La Spezzanota", some of these trees are over 500 years old!
It is a much sought-after oil, with an intense flavour reminiscent of artichokes and bitter almonds! Excellent with meats, grilled vegetables and soups.
Organoleptic Analysis
I Secolari : no defects, fruity green 4, bitter 4.8, spicy 3, sweet 2.
Hints of grass 2 artichoke 1 and leaf 1,4
