Calamarata is a typical pasta of Neapolitan origin. Bossolasco's calamarata is an artisanal durum wheat pasta.
Its short shape is well-known in the cuisine of the region of Campania and beyond. A fish-based dish popular everywhere in Italy.
The original recipe requires it to be cooked “al dente” and to be accompanied by calamari sauce and cherry tomatoes.
There are numerous variations, for example with swordfish ragù or courgette and sea bass sauce.
