I graduated in Biomedicine in 2010 from the Federal University of the State of Rio de Janeiro, Brazil, and in Nutrition from the Federal University of Rio de Janeiro, Brazil, in 2012. Afterward, I obtained an MSc degree (2015) in human nutrition at the Federal University of Rio de Janeiro, where I studied the nutritional adequacy of vegetarian/vegan diets. Then, during the Ph.D. I studied the effect of food processing on the nutritional quality of meat analogs at the Food Process Engineering Group. I obtained the degree in 2019 from Wageningen University & Research, the Netherlands. Currently, I am a postdoc researcher at the Plant-based foods and Biochemistry Group at the University of Copenhagen, Denmark. I am studying how sustainable food processing impacts the nutritional quality of plant proteins.
